Ask and ye shall receive

Banana Ginger Muffins

2 cups flour
1/2 cup sugar
1 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 cup crystallized ginger
2 large mashed up over-ripe bananas
2 eggs
6 tbsp unsalted butter
3/4 cup 2% milk

Preheat Oven to 400 degrees
In large bowl thoroughly whisk together flour, sugar, baking powder, cinnamon, salt , and ginger
Whisk the eggs is a small bowl. Whisk in the mashed banana, butter, and milk until thoroughly combined. Scrape this mixture into the flour mixture and whisk just until evenly moistened. Don not over-beat. Spoon the mixture into the prepared muffin pan. It will reach the top of each cup.
Bake 18 minutes, or until a knife inserted in the center of a muffin comes out dry. Remove the muffins from the pan and let cool on a wire rack. Serve warm or at room temperature.
